French Toast Casserole

Our mornings are usually the busiest moments of our day. We’re either running around getting ready for softball games or rushing to get to school and work on time. I’m always looking for ways to make quick easy meals when we’re on the go. I was excited to make this breakfast casserole bake because I love french toast. I prefer it over pancakes any day; a close second would be waffles 🙂 This dish was a huge hit in my house! I’m already planning to make it Sunday night to last us another week. It’s super easy to make. Preparing it takes about 20 minutes and then you’re done until you’re ready to bake the next morning. So if you’d like to know how to make this quick tasty breakfast dish, read below.

Ingredients:

  • 1 loaf of French toast bread (thicker loaf)
  • 7 large eggs
  • 2 cups of milk
  • 1/2 cup of heavy cream
  • 1/2 cup sugar
  • 1 Tbsp vanilla extract
  • 1 tsp cinnamon

Topping ingredients:

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 cup cold butter (8 tbsp)
  • A pinch of salt

Directions: 

Start by removing the ends of the loaf. (I don’t like the ends but if you do, you could keep them in the recipe). Cut the loaf in cubes and place them in a greased 9’13 pan. Next mix the eggs, milk, heavy cream and sugar in a medium bowl. Stir in the vanilla extract and cinnamon.

Pour the mixture evenly over the bread. Make sure all bread is soaking in the mixture. You press down on the bread with your clean hands if you need to get it covered. Cover the pan with Saran Wrap and place inside the refrigerator.

In another bowl, mix together the flour, brown sugar and salt. Cut the butter in small pieces and mix it in with the dry mixture until crumbly. Place in zip lock bad and put it in the refrigerator until ready to cook.

In the morning (or whenever you decide to cook your french toast), preheat your oven to 350 degrees F. Pour the crumble mixture evenly over your soaked bread. Place it in the oven and cook for 45-50 min.
