Mom’s Meatballs

I accidentally stumbled upon the perfect meatball recipe the other day. It was a day like any other for this working momma of two, scrambling to get homework done and wondering what the heck we were gonna eat for dinner. We were on some sort of spaghetti and pasta binge to the point where my daughter even said, “omg pasta again??” Pasta is an easy choice when you don’t have a lot of time and so pasta it was for the 3rd time that week. Don’t judge. This time however, I decided to change it up and add homemade meatballs. Luckily I had just the right ingredients to concoct something and it actually turned out pretty amazing! Since this recipe was uber easy to make and since you can probably make it with the things you already have in your kitchen, I thought I’d share this recipe for any other busy mommas out there scrambling for a dinner idea.

Disclaimer: I took plenty of before and during photos but I didn’t get the finished product. I was either too busy enjoying my dinner or I was picking up the noodles my one year old spilled on the floor. (You can guess which scenario is more likely) Regardless, I’m bummed I forgot to take the picture because they were absolutely amazing! Anyway, you’ll just have to try it out yourself to see the finished recipe 😜

Ingredients

  • 2 lbs ground beef (or ground turkey)
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tbsp dried parsley
  • 1 tbsp black pepper
  • 2 tbsp garlic powder
  • 1 sleeve of ritz crackers crushed ( or saltine crackers or shake and bake bread crumbs, etc.)
  • Pinch of salt

Preheat oven to 350 degrees

Start with the ground beef and add in the eggs, grated parmesan, oregano, parsley, black pepper, garlic powder and crushed crackers.

Mix all the ingredients well and roll the mixture into a small ball about the size of a golf ball.

Place the meatballs in a lightly greased cookie sheet. (I always like to line my sheets with aluminum foil for an easy cleanup 👍🏼)

Meatballs should be about 1/2 – 1 inch apart. Bake the meatballs for about 30 minutes until they’re brown.

While they are cooking, prepare your spaghetti or pasta however you like. When the meatballs are done you can add them to your sauce to cook for about 10 min and serve!

Trust me, these meatballs are full of flavor! They are the perfect addition to my spaghetti dinners.
